Koya opened to an enthusiastic reception- deservedly so, when it offers a rare opportunity to celebrate udon noodles in all their glory. Noodles are made daily, the dough trodden by foot in the traditional manner, a world away from the limp, lacklustre offerings so often masquerading under the name 'udon'.
