In your country, what's the traditional Easter meal?
A widely known culinary tradition for Easter are colored eggs. These are not only popular with children but also part of a festive Easter breakfast. Our traditional German Easter meal consists of lamb or poached trout accompanied by seasonal vegetables and boiled potatoes as well as a good jus. In the afternoon it is very common to meet up with family and friends for coffee and festive cakes.
How will you celebrate Easter?
As the restaurant will be closed on Easter Sunday I will surely head out of the city to see my family at home. Looking forward to my mother’s cooking – I expect like most of us do from time to time.
Do you do anything special to mark the festival at your restaurant?
Well, we do not offer a special Easter menu at Aqua during those days but the menu will feature a lot of seasonal products which are all characteristic for the Easter season. It could also well be that we create something on the dessert side, maybe with fresh rhubarb if that is already available in high quality.  
What ingredients are at their best at Easter time in your country?
We have great lamb meat at the time. Then there are fresh herbs like wild garlic, chives and cress as well as first spring vegetables - young spinach, carrots and radish – and of course, it is the time for very good rhubarb.
Aqua's Chocolate Mousse
Recipe by Aqua pastry chef Nadja Hartl
65ml heavy cream
30ml milk
10g invert sugar
35g egg yolk
115 g  dark chocolate 65%
210 g whipped cream
Stir the egg york together with some of the milk. Bring rest of milk, cream and invert sugar to boil. Add the egg yolk mixture to the hot milk and stir rigorously until it thickens. Pour the liquid through a strainer und continue to stir until it cools down. Add the whipped cream to the mixture and gently fold it in. Ready for serving when it is cooled down.
