The best way to test the quality of extra virgin olive oil is to:
• Heat the olive oil to 28⁰C
• Smell and taste in small sips
• High quality extra virgin olive oil will have the following aromas and flavours - Apple, sweet, grass, green leaves, bitter, rough, piquant, almond and hay
• The highest quality extra virgin olive oil should smell & taste fruity
• The colour of extra virgin olive oil depends on the different olives, area of production and the ripeness. The colour will vary from yellow tones to darker green tones.
