Singapore: The Lighthouse restaurant re-opens its doors at The Fullerton Hotel
Offering diners the best views of Singapore, The Lighthouse Restaurant at The Fullerton Hotel has reopened it doors following refurbishment, offering a Northern-Italian menu overseen by new chef Diego Martinelli.

With captivating views of the Singapore skyline and Marina Bay, The Lighthouse occupies the exact location where a beacon once used to guide the world’s mariners to the safety of the Singapore port in the 18th Century.

The newly refurbished 52-seat restaurant, offers a traditional Italian menu with a contemporary edge. The cosy and welcoming atmosphere is contrasted with panoramic views of the city and mirrored panelling, emphasising the stunning location. The Lighthouse also offers guests exclusive access to a rooftop viewing platform on top of The Fullerton, which is the perfect setting for pre-dinner drinks and private functions.

The exquisite modern cuisine, created by Chef de Cuisine Diego Martinelli, incorporates the rich flavours and colours of Italy. Signature dishes include Grilled Polenta, Fresh Taleggio Cheese and Pickled Radicchio, Handmade Tagliatelle with Poached Lobster and the tantalising Grilled Suckling Pig Cheek with Green Apple Compote.

Desserts have been specially designed to give guests a real taste of Italy with accents and flavours from the different regions. Delve into gastronomic bliss with the Classic Emilia Romagna Tagliolini and Almond Pie and Homemade Ice Creams, complemented with Italian liquors and dessert wines.

We anticipate delighting palates with the sensational flavours in dishes executed with simplicity and finesse.”

Bringing 11 years of culinary experience, Chef Martinelli has an inspiring culinary background. Born in the scenic Modena in northern-central Italy, better known as “the capital of engines” home to the factories of the luxurious Ferrari, Maserati and Lamborghini, Martinelli possesses a spirited drive that led him to graduate from the I.A.L Institute of Culinary Arts in Serramazzoni, Modena and pursue excellence in his career. From humble beginnings as a Commis chef, Martinelli has persisted in perfecting his craft through the years. Having honed his skills working at Four Seasons Hotels around the world, prior to his latest appointment, he was at the ultra-exclusive Bvlgari Hotels & Resorts Bali, where he served in a similar capacity.
