Shaun Hergatt invigorates Manhattan’s uncharted restaurant frontier

New York (June 8, 2009) – Chef Shaun Hergatt and The Setai Group introduce SHO Shaun Hergatt, an infinitely creative, cutting-edge fine dining restaurant. Located in the heart of the Financial District, SHO Shaun Hergatt invigorates one of Manhattan’s last uncharted restaurant frontiers. With its sleek design and seamless hospitality, SHO Shaun Hergatt will transform the neighborhood’s dining identity with a restaurant unlike anything Wall Street has seen.

An impressive young Australian chef, Hergatt began his career with a four year apprenticeship in Cairns, complementing his innate culinary sense with formal French training. He worked for the Ritz-Carlton for seven and a half years, moving from Australia to the United States. His work in fine dining restaurants around the world, including The Setai, Miami garnered him three-star reviews and extensive international acclaim.

At SHO Shaun Hergatt, Chef Hergatt will offer modern French, Asian-accented menu that fully expresses his culinary style and background. Using the finest seasonal ingredients from the United States, Australia and Asia, he creates dishes that are based around two to four key ingredients. With this minimalist approach, he showcases exotic ingredients and their flavorful intensity. Appetizers include Salt Pressed “Petuna” Tasmanian Ocean Trout with Nashi Pear and Kalamansi Dressing and Zucchini Blossoms filled with Blue Prawns, Lemongrass and Kaffir Lime Leaf Scented Sambal. Entrées surprise the palate with a savory combination of East and West flavors in dishes such as Thai Pepper Dusted Beef with Glazed Beef Cheek and Pearl Onion Soubise, Slow Poached Halibut with Silky Celeriac, White Asparagus and Black Truffle and Maine Lobster “Poêlé” with English Peas, Saffron and Verjus Emulsion.
SHO Shaun Hergatt’s 550-bottle wine menu encourages guests to enjoy unusual wines from boutique, family-owned and biodynamic vineyards across the world such as Domaine Paul Blanck, Montalcino di'l Marroneto, Andrew Will and Royal Tokaji. Wine aficionados will appreciate the ever-changing “Sommelier’s Reserve List,” which has exclusive offerings of cult and library wines including a vertical Cabernet Sauvignon from Ridge Monte Bello and a 1974 Petrus. The restaurant allows guests to explore exceptional wines not normally offered by the glass with their Signature Wine Program, which, in its inception, will offer selections from producers such as Honig Winery, Château Rouet, Gundlach Bundschu and Burgess Cellars.

Guests find a crescendo of unique dining experiences in the different rooms throughout SHO Shaun Hergatt’s expansive space. Denniston International and Robert D. Henry Architects designed the restaurant to be the ideal canvas for Hergatt’s cuisine. Organic materials like mother of pearl and Brazilian walnut intermingle with opulent materials such as Thai silk and bronze to create a sexy yet inviting ambiance. Guests are greeted by the stunning Black Bar, named for its iridescent mother of pearl surface and regal, Zen-like lounge. The lounge tables, inset with mother of pearl and glass inlays, glimmer against the silk lined walls and the room is bathed in a warm glow with candles floating in a rectangular infinity-edge pool.
To enter the dramatic dining room, guests pass through The Wine Gallery, a spectacular glass arcade displaying SHO’s impressive wine collection. Overlooking the bustle of the gallery and offering a visual and integral dining experience is The Tasting Room. This unique room is surrounded by wine-encased glass walls and features a high-top, mother of pearl and bronze table that seats 16. The room is ideal for experiencing a special evening of private dining, wine classes or exclusive tasting menus. In addition to The Tasting Room, SHO Shaun Hergatt offers two other private dining rooms that accommodate 16 and 50 guests respectively. A wooden double door swings into the main dining room, where a smaller lounge flows into the grand two-story “dining cube”. The dining room’s handsome atmosphere is set by Brazilian walnut and Terrazzo floors and Millwork and Thai silk walls; it provides a calming contrast to the open exhibition kitchen, separated from the dining room by a glass wall, supporting Hergatt’s belief in a personal connection with his guests and allowing diners to view the energetic kitchen at work. White linen tablecloths highlight the finest plate settings – Christofle silverware, dishes made of French porcelain and mother of pearl and hand-blown Riedel glassware.
