Back at the farm, armed with spoons, we dig into the honeycomb. The cells pop open with ease to reveal the sticky liquid inside. If you can put up with a bit of wax at the end of every mouthful, it’s quite a liberating experience.
 
To release the honey, the combs are spun inside in a drum. They honey is strained while the wax combs can be put back into the hive – the bees will polish off any remainder of the honey before refilling them with another portion of the summer.
