WABI is delighted to have secured the considerable talents of Australian chef Scott Hallsworth. Scott spent six years at Nobu London, working his way up from Chef de Partie to Head Chef, before launching the Nobu Melbourne site in 2007. More recently Scott was Executive chef at the Mirai Restaurant Group in Dubai and Bahrain.
The restaurant will offer both formal and casual Japanese dining over two floors. Scott’s dishes will include Slow Cooked Enoki Mushroom 'Risotto' with Fresh Sussex Edamame and Shaved Truffle and Smoked Duck Breast Tataki with Foie Gras Kabayaki and Ginger Amazu Sauce.

The stylish cocktail bar featuring a stainless steel water wall will be on the ground floor and will serve an extensive drinks list including a range of signature cocktails including the Bonzai Kitten (Sake, Vodka, Calpis and Lime Juice) and the Silver Fox (Gin, Fresh Shiso, Ginger, Cucumber and Ginger Beer).
WABI will be incorporating one of the most unique and spectacular aquarium installations in the country, housing biodiverse species such as jellyfish with state of the art design and display holding more than 2000 liters of salt water, installed by Ben Woodward from www.fishkeeping.eu
Designed by Studio 21, owned by Zoe Hui whose previous projects include ‘Beard Papa’, a Japanese franchise dessert company, both the bar and restaurant will showcase clean, geometric lines, traditional dark wood and muted colours, giving the impression of understated elegance, much like Japanese cuisine itself. The WABI brand was created by www.disenio.co.uk. Disenio worked in conjunction with Studio 21 ensuring that the brand, together with the calm surroundings of its Œzen line¹ formations, worked in harmony with the overall look and feel of the restaurant interior.
